Hi Amy, this all depends on how warm your house is, and how quickly your bread dough doubles. The 12-hour rise is geared for a 72°F rising environment, so if your home is much cooler than that and your dough is rising slowly, you should be able to safely extend that rise time. However, if your home is warmer, the dough may double more quickly, and you might even need to proceed with dividing and shaping in less than 12 hours.
