I’ve made this for the first time and after one slice, it looks like the texture will be good. I’d like to increase the sourness a bit, though, to come closer to the recipe I’d been using. Any suggestions? I see comments that have increased the amount of starter, and I thought I’d read that a longer proofing in the refrigerator might also. Will either of these help? Are there better options? Thank you.
