Hi Leigh,
Yes, the crumb is quite open. I played around with ratios of white to WW and this was the greatest WW ratio that my family would still accept as bread 😅 I also noticed when I use hard red whole wheat (vs hard white whole wheat) it's a bit denser. Good luck!
