I've been baking this weekly for a few months now and it is hands down amazing! Not just the flavor but the ease of making it, and that says a lot coming from a working mom of 3 elementary aged kids.
I tend to bake with more whole wheat so here are my adjustments:
100g unfed starter
20 g salt
670 g Hard white whole wheat flour
330 g white bread flour
825 g water
After I form the boules, I place them seam side down on parchment paper sprayed with baking spray. Then place them (boules on parchment) into large salad bowls (Corelle) and put them into a reused produce bag to rise.
