When I saw this recipe and the picture , I said this is called ensaimada in the Philippines ( also a former colony of Spain for almost 400 years) where I from and now living in the Midwest. I love ensaimada and make it occasionally. I’ll try making it following this recipe, the recipe I have uses whole eggs.
