Ive been making the same sourdough loaf since covid began. I proof my dough in the microwave with the door cracked so the light stays on. Depending on the season, I get between 70 and 80° in there. If too warm, I just shut the door to tuen off the light. Bonus is since it’s a metal box the pets can’t mess with my dough! Haha
