Hi Jim, we don't recommend spraying your banneton with baking spray. Our preference for high hydration doughs is to use a cloth liner in your basket and flour it generously. By "generously," I mean rub the flour into the cloth so that it's embedded in the weave, and then sprinkle a little more flour on top of that. I find a combination of half AP flour and half rice flour works well for this purpose, since the rice flour isn't as easily absorbed into the dough and does a better job of preventing sticking. The virtue of using a cloth liner is that, if need be, you can gently peel the cloth off the dough, which just isn't possible with a banneton.
