Hi Pam, it's important to let your bannetons dry thoroughly and to brush out excess flour after drying and before storing. This will help prevent mold from developing. If mold becomes an issue, exposing the baskets to direct sunlight for several hours can be helpful, or you can dry them in a 250°F oven for 45 minutes (which will kill the mold), and then brush out any remaining debris.
