Hi Julie! When it comes to brotforms and bannetons, there really is not one material that is preferred over the other. We love using the natural cane bowls (those seem to be the most common) but using a plastic based form, the pressed pulp forms (or even a metal mixing bowl) will all do the trick. It's more about the size and shape of the loaf that you want to be baking. The brotform is there for support...and all of those materials are very capable of keeping your doughs nice and cozy while they rise. Happy Baking!
