Hi Coco, mold like you describe is obviously not desireable but is fairly common, because bannetons tend to retain moisture. Since you're using a liner with your basket, and the bread will be thoroughly baked, the presence of a little mold on your basket shouldn't cause any harm. The best way to prevent mold from happening is to be sure your basket has a chance to dry thoroughly between uses. Many bakers recommend drying out the basket in a low oven (250°F for up to 45 minutes) as a way to kill any existing mold. If you decide to try this, keep an eye on the basket so that it doesn't burn! Placing the baskets in the sun for a few hours can also help to kill mold, although not everyone has this option during the winter months.
