Hi Lauren, the issue with adding cornstarch to the Gluten-Free Measure for Measure flour as part of the flour content, is that this could result in more density in the final baked good. While All-Purpose flour would still have plenty of gluten to assist with the structure and rise, reducing the amount of Measure for Measure and replacing it with cornstarch might not have the same positive effect.
