Hi Eva! You certainly could add a touch of vital wheat gluten to increase the strength of the cake flour if you are looking for a stronger structure in your cakes. Unfortunately, there is not a golden ratio to use in cases where you want to do this, but we would recommend starting by replacing 1 teaspoon of flour with 1 teaspoon of vital wheat gluten for every cup of flour that you are using in your recipe.
