I want to use cake flour instead of all purpose flour in a rolled cookie recipe. How would I back into that? The cookies that I had tried were unbelievably good for rolled cut out cookies. They had structure, but were also very tender, buttery and flavorful and they weren't super hard. They were about 3/8" in height. Any formula for substitution would help me a lot. Thank you
