Keeping in mind that hydration is primarily a tool baker's use to compare recipes at a glance and does not tell the whole story of the recipe, you can indeed factor honey into the liquid calculations. Since honey is usually anywhere from 15-18% water, you can multiply the gram weight of honey you are using by 0.18 to determine the gram weight of how much liquid you are adding when using honey.
