This was a fun article to read, but I felt confused about some of the facts. I do not believe the first colonists would have commercial yeast, since I believe it was invented later. Even so, why would they not utilize their sourdough and make sourdough biscuits to save money? Sourdough is inexpensive and makes delicous biscuits. Also, I feel a little incredulous about beating dough for an hour to get any raise out of it. Firstly, it goes against everything I know about dough- would be tough and unpleasantly flavored and textured. Secondly, who had time to see if that idea would work and why would they want to when they could just use sourdough?
