Interesting article, I never knew about the North/South difference in flours. I have great childhood memories of my grandmother baking biscuits for breakfast, made by " feel", no actual recipe and baked in a wood stove. I was impressed at how she knew how to get time/temp correct. They always came out delicious. I believe she used Bakewell Cream, too.
