I wasn't aware of the difference between Northern and Southern wheat - interesting. I suspect another difference in the biscuits is the use of lard in the South. In New England, you're lucky to find a pound of lard in the big markets - I often have to go to a little latino market and buy manteca. In the South, 5 gallon tubs of lard are stacked in the aisles!
