Hi R, that's a great question! We did a little research and found that prior to the advent of roller mills (which were developed in Europe in the 1830's) white flour was not easy to produce in large quantities. It wasn't until the 1870's that this new technology became widely used in America and white flour became less expensive and easily available. While wealthier families may have used white flour for their biscuits prior to that, we suspect many a biscuit was made with whole wheat flour in early America.
