Debra is correct. But she did not tell all of it. Hardtack can still be purchased. Look for a product called a water biscuit. And another reason why biscuits were preferred to breadin the south was because the baking time was shorter. Bread would take an hour, biscuits would take 15 minutes. Bread would heat up the house or cook house too much. A batch of biscuits, baked in the summer heat was not as intolerable as bread.
