Stine April 2, 2023 at 7:19am Rose Levy Berenbaum recommends using a frying spider to fold ingredients in, for all the same reasons - wide air gaps but more points of contact, and the tool is inexpensive. It shocks everyone I bake with but works fantastically. Highly recommend! Reply
