Generally a hard crust like this is due to too much butter, or simply packing it too hard Sheryl. You should be pressing it firmly until the crust is no longer crumbly but not removing every last ounce of air out of the crust before baking. Let us know if the next one is a bit more presentable; and if it isn't we'll still enjoy the fabulous mess with you!
