Hi Vivian, it's definitely worth an experiment! I think the risk is if the slices are too thin they may crumble/meld together, depending on how cool/warm the cookie dough is. Cinnamon roll dough has more gluten development and isn't quite as delicate, and you're generally not trying to cut thin slices the way you may need to do for a cookie recipe.
