Hi Nancy, the egg whites shouldn't need to be beaten to a soft peak, so I don't think that's where your cookies went wrong. I suspect your baking temperature might have been a bit off, so it might be worth checking your oven temperature with an inexpensive oven thermometer. Be sure to preheat the oven for at least 30 minutes, and then check the temperature on the thermometer. If your oven is running a little cool or warm, it's easy enough to adjust the dial up or down and wait for the thermometer to read the correct temperature before baking your cookies. Another possibility has to do with how you measured your ingredients. For best results we recommend either weighing your ingredients, or using this method to measure your flour (even almond flour) by cups.
