Hi Jon-Paul, it sounds like you're creaming for too long a time. Our blog on Creaming Butter and Sugar offers some great tips, and a video to help with timing, butter consistency and what your results should look like. I would start with butter that is pliable, and aim for only about 2 minutes of creaming.
