Hi Lyn, pie crusts do tend to soften and become more moist as a pie sits, and crust dust isn't going to provide a magic barrier, but it should help a little. We haven't tested gluten-free flours with this particular process, but we do think our Gluten-Free Measure for Measure Flour is your best bet if you want to give it a try.
