Hi Louise! Cast iron was not our testing at the time this blogpost was written, but is an excellent material for pie crust baking as it heats evenly and retains heat nicely. Pie crusts can get nice and crispy in cast iron and while most of the time bottom crusts are underbaked, they are sometimes overbaked in a cast iron due to their efficient heating. Happy baking!
