I didn't realize there could be such a difference in the type of pan that would change the crust of the pies like that! No wonder my grandmas is better, I've been using ceramic while my grandma uses metal. I guess grandma knows best! The comment about baking the pies like a pizza is very interesting, but it makes sense if you think about it in the outside perspective of getting the bottom of the crust done quicker than the filling getting gooey.
