I'm guessing the pock marks you're seeing may be caused by condensation that accumulates as the pie crust thaws out overnight in the refrigerator. You might want to place a paper towel between the plastic wrapping and the pie crust to keep the moisture from accumulating on the crust as the pie crust thaws. Or perhaps thawing the pie crust out at room temperture more briefly (unwrapped) would prevent this from happening.
