Hi Maria, the preheated pizza stone will help hold the heat, and if you have everything set up to go before you slide your scored loaves into the oven, it shouldn't take too much time to insert the pan with towels and pour the ice water into the preheated pan. If need be you could preheat the oven a little hotter, and then reduce the baking temperture once everything is in the oven, but Maurizio doesn't indicate that this is necessary.
