Because you want to use plain mashed potatoes for bread baking (you are not enriching the potatoes with anything like cream or butter), the ice crystals that form during the freezing process will likely change the consistency and texture of the potatoes when they are thawed. If you do decided to give it a try, just make sure to really watch the consistency of the potatoes before adding them to your bread doughs. If the potatoes are grainy, that texture may still be noticeable in the final baked loaf.
