Potatoes are also great in cinnamon rolls -- they will make the rolls very fluffy and tender, and they will stay fresh longer. Not quite as good as using a tangzhong, but a lot easier in my opinion. I always keep a box of the cheap store brand of mashed potato flakes (they seem to have fewer additives) on hand for baking purposes only. Super convenient.
