Regardless of frosting preferences, if the edges of the cupcakes are dry, they’re likely over-baked. Over-baking is so easy to do, and not knowing when to pull baked goods from the oven is a common problem. A good recipe baked just long enough should produce cupcakes that are soft and moist even without icing, so the icing is just—pardon the shameless pun—the icing on the cake.
