For unbaked items I would suggest choosing a nicely balanced dutch process. A natural cocoa, or a black cocoa would probably be a bit too bitter or just too strong. I love the Bensdorp Cocoa Powder that we sell and would choose that myself. Have fun experimenting with your next recipe and see which cocoa flavor you like best Eileen!
