Why the need for the sugar? Is it a taste preference, or needed for some precision reason? Most bao dough recipes I’ve seen don’t contain sugar at all. Can the sugar be reduced fro 6 tablespoons to something less if it’s absolutely required, and if so, how much of a reduction?
