Hi Cathy, this cookbook doesn't really get into gluten-free baking, but our Gluten-Free Measure for Measure flour could certainly substitute into many of the non-yeasted and non-sourdough recipes in this book. As always, this flour is best used in regular cake, cookie, muffin and other pastry recipes as a one to one substitute for either our unbleached all-purpose flour or whole wheat flour.
