You need to use the roller/scraper. I promise it'll beautifully handle any cookie recipe you throw its way. You can't believe what a thing of beauty butter creamed in the stainless bowl is--it's like the most gorgeous fluffy yellow cloud you've ever seen, plus you can't really over-beat it--it just remains stable and beautiful. Just make sure to turn the speed down when you add ingredients (especially flour); no need to turn the mixer off.
