Hi Cosmo, have you reached out to the customer support folks at Ankarsrum? They are very helpful, and no doubt can provide guidance on how to knead low hydration doughs. With this type of dough, the roller will need to be positioned further from the side of the bowl and you'll likely want to knead on a slower speed (12:00).
