It is not a question of holding up, it's that the Ankarsrum will not work at all with low hydration dough. Neither the roller or the hook will knead dough with anything under 65%. I found that I am limited to making 70% hydration dough. I have tried everything, and it just does not work. So much for the hype. Mine is going back.
