I’m curious to know how this would hold up to a low hydration pastry recipe which is a 1kg flour to 550g water ratio. I have burned out a KitchenAid and a DeLonghi mixer with my low hydration antics. I have tried a Bosch, but didn’t like the way it worked a wetter dough so I didn’t dare put my pastry dough in it. Any thoughts about how this does with a very dense dough? Looking for heavy duty, I guess.
