Hi Nadine! If you are seeing a wrinkled surface on your dough after it has deflated, then it has likely over risen and will not be able to rise again without an addition of commercial yeast. Unfortunately for sourdough it generally doesn't have the capacity for an extra rise like commercial yeast doughs do. Happy baking!
