Had no knowledge of the window pane test, it was very informative and helpful. I will be using that in the future. I have rarely had issues with my bread kneading since I was taught how to work with yeast dough by my Grandmother who came here from an Eastern European country, Bohemhia. My mother also helped me out with my kitchen adventures.
