If you are noticing huge changes Dawn, then you might be seeing different depths of batter in your modified pan choice. We'd love to hear about what kinds of differences you are seeing, and we certainly don't want over baked cakes so feel free check as early as you feel comfortable doing. It is always easier to add more time to the bake than taking it away (our test kitchen is working on a time machine for this very purpose though)!
