I totally disagree on baking multiple smaller pans rather than bigger pans will not change the baking time. The diameter of the pan makes a HUGE difference in how long it takes the middle to bake. 3" less diameter takes a lot less time to cook through. Overbaking will give you a very dry cake. I have tried this with standard cakes as well as taking my cheesecake recipe from a 10" springform to 2-8" springforms. There is a lot of adjustment needed in the baking time.
