Hi Lisa, our Baker's Hotline is always willing to help make adjustments such as this. In most cases if a recipe calls for Bread flour and you need to substitute our Unbleached All-Purpose flour, you could reduce the water amount by about 2 teaspoons per cup of AP flour substituted. You may end up adding a little of that back in, but this allows you the opportunity to adjust the hydration to achieve the dough consistency you're looking for. However, there are some instances (like our Pan de Cristal recipe) where substituting AP flour isn't going to work out well. It would be remiss if we didn't also acknowledge the challenges involved in particular substitution situations.
