Once again, I cannot believe that a 1% difference in gluten in flour has the impact on the bread loaf that you claim. It is not scientifically defensible! Your data does not support your conclusion! It is your opinion, not scientific data that is driving your conclusion! Sorry, my data visually demonstrated that AP flour produced a more homogenous dough than the the bread flour!
