I have used dry buttermilk powder many times. It's convenient if I want to make something and I don't have buttermilk on hand. There are instructions on the package I have (not King Arthur's). You add the dry buttermilk to the dry ingredients and then add the required amount of water, 1 cup for instance instead of 1 cup of buttermilk. It makes great biscuits. Once I open the can or pouch of dry buttermilk I keep it in the fridge as recommended on the can that I have used. Keeps for a really long time.
