Hi Terri, both our Unbleached All-Purpose flour (11.7%) and our Bread flour (12.7%) are good choices for using in your bread machine. While I don't know the protein content of your store brand all-purpose flour, our AP flour is generally on the high end when it comes to protein content, so will likely be a better bet for using in your bread machine. Since our Bread flour will absorb a little more liquid than our AP flour, you may find you need to add a tablespoon or two extra flour when you check in on the dough during the kneading cycle. Aim for a soft, supple dough.
