Hi Sarah, as Martin says, you'll likely need to do a little tweaking (burning of bagels) to adjust this process for your Ooni, but starting with the temperatures he recommends, and then reducing the gas to its lowest setting right before loading the bagels, will get you to those beautiful bagels a little faster.
