We understand baking with dietary restrictions can be challenging- our goal is to offer a wide variety of products to make baking accessible to everyone regardless of dietary requirements. One of King Arthur's greatest assets has always been dedicated customers like yourself who help guide our development and we sincerely appreciate your input.

We also strive to offer customers complete information by updating the packaging online and offering digital copies of nutritional/ingredient information on the product page. Our new Gluten-Free Pizza Flour and Gluten-Free Bread Flour are marked with a “Gluten-Free” badge on the packaging which is our guarantee to you that our products meet FDA guidelines. To be sure our products meet this standard we use ingredients that are verified gluten-free by the manufacturer. When we use gluten-free wheat starch as an ingredient, it goes through additional testing in a certified lab using both the R5 ELISA Sandwich and R5 ELISA Competitive methods. Once produced, the final Gluten-Free Pizza Flour and Gluten-Free Bread Flour are tested again to ensure a strict gluten-free standard of less than 20ppm, with a target of less than 10ppm, is met for the finished product.

Gluten-free wheat starch has been found to be well tolerated by most people affected by Celiac Disease and those with a gluten intolerance or sensitivity. We can understand your frustration regarding this ingredient, and while these two products are currently the only ones we carry that contain gluten-free wheat starch, we always recommend checking nutrition labels and allergen statements on the packaging and consulting your physician prior to consumption.
