Hi Gayle, some people have issues with the type of proteins in wheat that form gluten (those with Celiac Disease, or those who are gluten sensitive or intolerant). On the other hand, some people have an allergy to all the components of wheat (not just the gluten-forming proteins). While our Gluten-Free 00-Pizza Flour and Gluten-Free Bread Flour does use gluten-free wheat starch, the wheat starch is cleansed of gluten, so should not present an issue for those who cannot tolerate gluten. However, it is not suitable for those who are allergic to wheat.
